Risotto with Porcini Mushrooms by Chef Stefano
Chef Stefano shows how to make this delicious `Risotto with Porcini Mushrooms`, one of the signature dishes of Sacci.

Ingredients:
* 80gr Riso Carnaroli
* 1 Onion
* 25gr Dry Porcini Mushrooms (or Fresh Mushrooms)
* 1/2 Glass Red Wine (Optional)
* Olive Oil
* Salt & Pepper
* Parsley
* 40gr Grated Parmesan Cheese
* 25gr Butter

How to Cook:
Cook the olive oil and the sliced onion in a pan, till the onion will get golden brown. In the same pan add the rice and toast it with salt and pepper and a tsp of butter. Add the porcini mushrooms previously soaked in hot water to soften for at least 20 minutes. When the rice is toasted add the red wine(optional) and mix until the wine evaporates completely. Use the same water you soaked the dry mushrooms into to cook the risotto for 18 to 20 minutes. When the risotto is al dente remove the pot from the stove and add the chopped fresh parsley and another tsp of butter. Let the butter melt and add the grated parmesan.
